Stand in front of the ghee shelf in any Indian supermarket and you will read the word pure perhaps thirty times. You will almost never read how it was made. That omission is not accidental, because the method is the only thing that meaningfully separates one jar from another.
There are broadly two ways to arrive at ghee, and they produce quite different things.
The industrial route
Milk goes into a centrifugal separator, which spins out the cream. The cream is churned mechanically into butter, and the butter is heated at high temperature until the water evaporates and the milk solids drop out. What is left is clarified butterfat. It is ghee, technically and legally. It is also fast — hours, not days — and it is what the overwhelming majority of commercial ghee is.
Because the process starts from cream rather than curd, and because it runs hot and quickly, the aroma compounds that develop during fermentation never form at all. The result is clean, mild, and slightly characterless. If you have ever opened a jar of ghee and thought it smelled of very little, this is why.
The bilona route
The traditional method takes the long way round, and every extra step is doing something.
- The whole milk is first set into curd with a starter culture and left overnight. This fermentation is the step industrial ghee skips entirely, and it is where the depth comes from — the cultures produce diacetyl and other volatile compounds that survive into the finished ghee.
- The curd is hand-churned, traditionally with a wooden bilona, until butter separates and rises. Churning curd rather than cream also yields buttermilk, which the maker's family drinks.
- The butter is simmered slowly over a low flame — often an hour or more — rather than boiled hard. The milk solids brown gently instead of scorching, which is where the nutty, almost caramel note comes from.
The economics are unforgiving. Making bilona ghee from curd rather than cream takes roughly 25 to 30 litres of milk per litre of ghee, against a considerably better yield for the centrifugal route, and it takes two days rather than an afternoon. It is labour-intensive, it does not scale neatly, and it cannot be done properly in a hurry.
Both products are called ghee. Only one of them tastes like the ghee you remember.
How to tell what you've actually bought
You do not need a laboratory. Four things are worth noticing when you open a jar.
The aroma should arrive before the jar does. Genuine bilona ghee announces itself the moment the lid comes off — warm, nutty, slightly sweet. If you have to put your nose to the jar to smell anything, something was rushed.
The texture should be granular, not glossy. Slow-cooled ghee sets into a grainy, almost crystalline texture rather than a smooth uniform paste. Perfectly smooth ghee has usually been cooled fast or blended.
The colour should be golden, and it should vary. Grass-fed milk produces more beta-carotene, so ghee made in the monsoon months when the grazing is green is noticeably deeper in colour than ghee made in summer. Perfectly consistent colour across every batch, year-round, suggests either a very large blending operation or added colour.
It should not need refrigeration. Properly clarified ghee has almost no water left in it, which is precisely why it keeps for a year at room temperature. If a label tells you to refrigerate it, the clarification was incomplete.
Why we're bothering
The honest answer is that we tasted the two side by side and could not go back. We are choosing makers who still do it the slow way, which means paying more per litre, accepting that supply moves with the seasons, and not being able to promise unlimited quantities. That is a genuine constraint on how fast we can grow, and we would rather explain it than pretend it doesn't exist.
