Your honey has gone solid. That's the good news.

Every winter, honey producers who sell the real thing get the same message: my honey has gone solid, is it spoilt? The answer is no — and in fact it is the single clearest signal available to a household that the honey in the jar has not been heat-treated.

It is worth understanding what is happening, because once you do, the supermarket shelf reads very differently.

Honey is a supersaturated sugar solution

Honey is roughly 80% sugars and only about 17% water. The two main sugars are glucose and fructose. At that concentration there is far more sugar dissolved than the water can comfortably hold — chemists call this supersaturated, and it is an inherently unstable state.

Glucose is the less soluble of the two, so over time it starts dropping out of solution and forming crystals. Fructose stays dissolved. The result is the familiar grainy, pale, semi-solid honey that sits at the bottom of the jar first and gradually works its way up.

This is not decay. Nothing has spoiled, nothing has been contaminated, and the honey has not become less nutritious. The sugar has simply gone back to being a solid, which is where sugar naturally prefers to be.

Why some honey never crystallises

Here is the part that matters commercially. Crystallisation can be prevented, and the honey industry knows exactly how:

  • Heat it. Warming honey to around 70°C dissolves existing crystals and destroys the microscopic particles — pollen grains, wax fragments, air bubbles — that crystals need as seeds to form around.
  • Filter it finely. Ultra-filtration removes those seed particles physically, along with most of the pollen. Pollen is also, inconveniently, the main way laboratories trace honey back to its floral and geographic origin.
  • Blend for high fructose. Honey from certain floral sources is naturally more fructose-dominant and resists crystallising for far longer. Blenders select for it.

Do all three and you get honey that stays a perfect, clear, pourable golden liquid on a shelf for two years. It looks flawless. It has also been heated hard enough to drive off many of the volatile aromatic compounds that made it taste of anything in particular, and filtered hard enough that tracing its origin becomes difficult.

The honey that behaves perfectly on the shelf is usually the honey that has been worked on hardest.

What to actually do with a solid jar

Stand the jar in a bowl of warm — not hot — water for fifteen or twenty minutes and stir. It will return to liquid. Do not put it in a microwave and do not boil it; you would be doing to it exactly what industrial processing does, at home.

Honestly though, crystallised honey is excellent as it is. It spreads on toast without running off the edges, and many people prefer the texture. Some European producers deliberately control the crystal size to produce a smooth, spreadable "creamed" honey and sell it at a premium.

Other things worth knowing

Honey does not expire. Its low water content and natural acidity make it inhospitable to microbes. Sealed jars found in Egyptian tombs have been reported as still edible. The best-before date on a jar is a legal formality, not a biological deadline.

Raw honey varies batch to batch. Colour, thickness and taste shift with the season and the flowers available. A producer whose honey is identical every single time is either blending at scale or standardising it.

Raw honey is not for infants. Because it is unpasteurised, honey can carry Clostridium botulinum spores, which a baby's immature gut cannot handle. Standard guidance in most countries is no honey at all under twelve months. This is worth being firm about.

What this means for us

The honey we intend to sell will crystallise, probably from around November. We are going to say so on the label rather than treat it as a complaint waiting to happen — because a jar that never sets is telling you something about how it was treated, and we would rather you knew how to read the signal.
