Why our dal looks duller than the shop's

Put our toor dal next to the packet from a supermarket shelf and ours will look worse. Duller, slightly uneven, less uniformly yellow. That difference is entirely deliberate, and it comes down to a step called polishing.

What polishing actually is

After pulses are dehusked and split, they emerge with a matte, slightly rough surface. That is what a lentil looks like. Because shoppers have learned to read gloss as freshness, most mills add a finishing step to make them shine. There are three common approaches:

  • Oil polishing. A small quantity of edible oil — sometimes a low-grade one — is tumbled with the dal to coat each grain. Cheap, fast, and very effective at producing shine.
  • Water polishing. The dal is moistened and then rapidly dried. This smooths the surface but risks moisture staying in the grain, which shortens shelf life and invites fungal growth if drying is careless.
  • Leather or soapstone polishing. Mechanical buffing against a surface to abrade the grain smooth. No additive, but it removes a thin outer layer of the pulse itself.

None of these is illegal, and oil-polished dal is sold openly everywhere. But all three are cosmetic. Not one of them makes the dal better to eat.

What it costs you

The outer layer being buffed away is not inert packaging — it is where a meaningful share of the pulse's fibre and micronutrients sit, in the same way that polishing rice removes the bran that contains most of its nutrition. Abrade it off and you have a prettier, slightly poorer lentil.

Then there is what gets added. Oil polishing means you are buying oil by weight at dal prices, and you have no idea what oil it was. Water polishing, done badly, is a shelf-life problem you inherit. And a very small number of operators have historically used industrial colourants such as metanil yellow to intensify colour — banned, occasionally still detected in surveys, and a good reason to be suspicious of dal that is unusually vivid.

Gloss on a lentil is not information about the lentil. It is information about the mill.

The same logic runs through the rest of the shelf

Once you notice this pattern you find it everywhere in the Indian pantry, and it is the reason our whole range is built the way it is.

Oil. Refined oil is extracted with solvent, then bleached and deodorised until it has no smell at all. That neutrality is sold as purity. Wood-pressed oil is crushed slowly at low temperature and keeps its aroma — and a faint sediment at the bottom of the bottle, which people mistake for a defect.

Atta. Industrial roller mills run hot and fast and often separate the bran and germ out. A stone chakki runs slower and cooler and leaves them in, which is why fresh chakki atta makes softer rotis and also why it does not keep for a year.

Turmeric. Commodity haldi is frequently bulked with starch or brightened with colour. High-curcumin varieties ground in small batches look darker and earthier, not neon.

How to check at home

Two simple tests, neither requiring equipment. For oil polishing, rub a spoonful of dry dal between your palms — if they feel greasy, it has been coated. For added colour, drop a teaspoon of dal into a glass of water and leave it a few minutes; the water should stay more or less clear. Colour leaching out immediately is a bad sign.

So ours will look plainer

Our pulses are cleaned, graded and left alone. In the bag they look matte and slightly inconsistent, because that is what a pulse looks like when nothing has been done to it. In the pot they hold their shape better and taste fuller.

We would rather explain this once than quietly polish it to match everyone else.
